Snowballing Usury Recipe

Snowballing Usury is one of the traditional snacks in northeast China, mainly old Beijing and Tianjin. It looks clear yellow, white and red, which is really good-looking. 

The traditional ingredients of "snowballing usury" include rhubarb rice flour, yellow bean, Chengsha, white sugar, sesame oil, sweet osmanthus, green and red silk and melon seeds, since it's pretty complicated we just used 3 kind of flour that you can easily find in the asian stores. Its production is divided into three processes: blank making, stuffing mixing and forming. The prepared "snowballing usury" is covered with bean flour, which is golden yellow, sweet in bean paste, soft in the mouth and unique in flavor. The bean paste melts at the mouth and tastes sweet. 

PS. We will use 3 flours: Glutinous rice flour, soybean flour, and sticky rice flour

Ingredients

  • 80g Glutinous rice flour
  • 80g Soybean flour
  • 100g Water
  • 20g Sticky rice flour 
  • 10g White sugar
  • 100g Sweet bean paste

Instructions

Pour soybean flour into a wok and stir fry for 5 minutes

After you stir fried the flour sieve it

Mix glutinous rice flour with sticky rice flour, sugar and water

Pour into a platter and steam the mix for 20 minutes in a steamer. Let it cool off after the steaming step

Spread the cooked soybean in a surface, then take the steamed dough and put it in the soybean

Roll it rectangular on the soybean flour

Spread the sweet bean paste all over the rolled dough

Roll up and shake off the excess bean noodles

Cut the dough in a size of your choice
