Chinese Fried Crab Recipe

In this recipe we will use "Shanghai hairy crab". The crab is known as the Chinese mitten crab and is very rich of nutrients. It is widely distributed in the long coastline of the Liaohe River to the Pearl River in the north of China. Among them, the Yangtze River has the largest yield and the most delicious taste. Generally speaking, the crab is especially the Yangtze River. It the recent years is very common to receive these crabs as gifts. We are proudly presenting our version of the Chinese spicy fried crab.

Ingredients

  • 2 Shanghai hairy crab 
  • 1 Garlic
  • 1 Ginger
  • 4 Red chili's
  • 1 tbsp Cooking wine
  • Moderate amount of starch
  • Moderate amount of shallot
  • 1 tsp Salt

Instructions

Place the crabs in the water and change the water several times for an optimal cleaning

Remove the hairy legs and cut the remaining legs and the body in a half

Cut the onion, ginger, garlic and cut the peppers into small pieces

Spread a layer of starch on the crab pieces

Heat the wok with cooking oil, put the crab to fry, simmer the crabs until turns yellow

Clean the pot, put a small amount of oil, and sauté the ginger and minced garlic and red pepper

Put the crabs and stir fry, then add cooking wine and salt

After the wine is dried, sprinkle the shallots and it's ready to be served
