Chinese Dandan Noodles Recipe

No one ever heard of Dandan noodles before, but Dandan noodles is one of the famous Chengdu dish. The noodles are thin, the brine is crisp, salty, spicy and fragrant. It is very delicious. It is mainly made of hand-rolled noodles cooked with friedminced  pork. This dish is widely circulated in Sichuan and often served as a feast dish. It has a history of 100 years. It is said that the name of Dandan Noodle is derived from the fact that the porters carry the burden on the street to sell noodles, while carrying the pot and the condiment.

Ingredients

  • 350g Minced pork
  • 100g Green shallot
  • 1 Star anise
  • 40g Minced peanuts
  • 1/2 tsp Vinegar
  • 1 tbsp Soy sauce
  • 120g Spinach
  • 500g Noodles
  • 3 Slices of ginger
  • 1/2 tsp Pepper powder
  • 1/2 tsp Sesame paste

Instructions

Mix the minced pork with minced ginger

 Heat the wok and pour in the mix and stir fry

Add soy sauce and mix

When the meat is dry take out

Boil some water and pour in the noodles

Boil the spinach and mince the shallots

Mix in a bowl, soy sauce, vinegar, sesame paste, pepper powder, green onion and add some oil or red chili oil (optional)

Add the noodles in the bowl with the seasonings, add the spinach in the surface and sprinkle with chives. Enjoy!
