Chinese black bean sauce in other words it's the super famous Lao Gan ma sauce, it's a sauce base on fermented black soya beans. Black bean sauce is the most popular ingredient in Chinese cuisine, particularly Cantonese and Sichuan cooking. So delicious and so easy to make at home, just 15 minutes and you can add to all your recipe a bit more of asian vibe.

Ingredients

  • 300g Fermented Soya bean
  • 30g Dry pepper
  • 30g Chili powder
  • 30g Sichuan Pepper
  • 20g Peanuts
  • 20g Soybean flour
  • 1 tbsp Soy sauce
  • 20g Sesame
  • Moderate amount of shallot
  • Moderate amount of ginger
  • Moderate amount star anise
  • 1/4 tbsp Sugar
  • 1/4 tbsp Salt
  • 1 tbsp Cooking oil

Instructions

Steam the black beans with some oil for 20 minutes and crush them with a spoon in the pan

Fry the red peppers and crush them like the beans

Stir fry the onion, ginger, star anise

Add the black bean and stir fry then add the fried chili

Add the mixture of peanuts, soy flour and sesame seeds

Dry the chili powder, saute, add some sugar, salt, a little soy sauce

and ready to be bottled
