Chinese Biang Biang Noodles Recipe

Even if you haven't heard the reputation of this kind of noodles it's very common, it's a noodle that is usually pulled by hand born in Shaanxi. The ingredients is also very simple, the difficulty it may be in the dough, but when the dough is ready all the hard part is already done. The taste of the noodles is very smooth and chewy, but the taste is basically all hidden in the dough, if you pull a good dough the taste will be more smooth or viceversa.

Ingredients

  • 250g Medium gluten flour
  • 1 tbsp Salt
  • 100g Bean sprouts
  • 3 Roots of green shallots
  • 2 tbsp Cooking oil
  • 2 tbsp Cooking oil
  • 130ml Water
  • 3 Roots of a pak-choi
  • 2 Petals of garlic
  • 2 tsp soy sauce
  • 2 tbsp Vinegar
  • 2 tsp Chili powder

Instructions

Pour the flour in a bowl, add salt, and add water several times during the stirring

Knead into a dough, cover with a plastic wrap, and let relax for 20 minutes

after 20 minutes knead the dough until the surface is smooth and cut the dough in 4 portions

Coat 4 oval-shaped dough with oil, cover with plastic wrap, and let stand for 2 hours

Boil the pak-choi
